Matcha Cashew Coconut Energy Balls

INGREDIENTS:

  • 1 C raw cashews, soaked in boiling water for 1 hour
  • ¾ C pitted dates, softened in warm water for a few minutes
  • 3 Tbs coconut oil
  • ¾ C shredded unsweetened coconut
  • 1 Tbs matcha tea powder

INSTRUCTIONS:

  1. Add all ingredients to a high powered blender or food processor and blend until fully incorporated.
  2. Roll into Tbs sized balls and coat with extra coconut, if desired.
  3. Allow to set for at least 1 hour in the fridge before indulging.
