Matcha Cashew Coconut Energy Balls
- 1 C raw cashews, soaked in boiling water for 1 hour
- ¾ C pitted dates, softened in warm water for a few minutes
- 3 Tbs coconut oil
- ¾ C shredded unsweetened coconut
- 1 Tbs matcha tea powder
- Add all ingredients to a high powered blender or food processor and blend until fully incorporated.
- Roll into Tbs sized balls and coat with extra coconut, if desired.
- Allow to set for at least 1 hour in the fridge before indulging.
