Watermelon Cucumber Splash Green Smoothie
Summer is in full swing which means one of my favorite fruits is in season: the Watermelon!
Watermelon is such a versatile fruit because it can be grilled, used in salads, smoothies, desserts…there really is no wrong way to enjoy it!
This sweet fruit is the perfect summer treat because it is low-calorie, fat-free, and full of water. It’s also packed with nutrients like Vitamin A, C and B, as well as potassium and lycopene. Lycopene is an antioxidant pigment that gives watermelon its beautiful red hue, and has also been shown to have several cardiovascular benefits such as reducing risk of stroke and helping to lower blood pressure – awesome!
I’ve had clients who sometimes worry that eating watermelon is not good for them because of the sugar it contains. While watermelon is high on the glycemic index, meaning it contains a good amount of sugar, it is actually lower on the glycemic scale per serving than some more common fruits. For example one cup of diced watermelon contains 9 grams of sugar, while the average banana contains 14 to 15 grams of sugar.
The other interesting thing about watermelon is that because it is so high in water, the glycemic load on the body when consumed is much lower. This means that the fruit will not spike your blood sugar as quickly as other high-glycemic fruits that do not contain a high amount of water, so rest assured it is safe to indulge!
Tonight I made a green smoothie featuring watermelon and a few other summer finds from my garden: cucumber and mint. The combination was refreshing, hydrating and packed full of nutrients to detox every cell in my body – yum!
- One Small Cucumber, roughly chopped
- 2 Cups Watermelon, diced
- 3 Cups Fresh Spinach
- 2 Tbsp Chia Seeds
- ½ Tbsp Lime Juice
- 1 Sprig of Fresh Mint
- ½ Cup Water
- Add all ingredients to a high speed blender and blend until emulsified.
